Christmas Pudding

My granny Violet from Ballinacarrigy, Co Westmeath used to make Christmas pudding every year. She still makes it.

To make it, you will need:

  • 2 oz flour
  • 4 oz brown sugar
  • 4 oz margarine
  • 1 tub of cherries
  • 4 oz bread crumbs
  • Teaspoon cinnamon and nutmeg
  • Spoon of chopped almonds
  • Grated apple
  • Orange peel
  • Lemon peel
  • Carrot
  • Bottle of guinness

Method

Mix margarine and brown sugar until soft.

Add eggs.

Mix well.

Stir in flour, cinnamon, fruit and cherries.

Add nutmeg, almonds, apple, carrots, orange, Guinness.

When my mammy was a kid, she used to stir it 6 times and make a wish.

Cover and leave overnight.

Put in a greased pudding bowl.

Cover Bowl in a big pot for 6 hours.

Eat on Christmas Day and all your wishes come true
