My great granny used to make a special cake called a Crinoline Lady. The cake was only made for a tenth birthday. My mum and her sisters got this cake for their tenth birthday. My granny gave me this recipe and she got it from my great granny’s cook book. She lived in Galway City.

Ingredients

  • 4 oz cream flour
  • 1 oz cocoa
  • 1 oz cornflour
  • 2 level tsp baking powder
  • Pinch of salt
  • 5 oz castor sugar
  • 2 eggs separated
  • 3½ fl oz cooking oil
  • 3½ fl oz water

Method

Sieve flour, cornflour, baking powder and cocoa into a mixing bowl.

Add the salt, caster sugar, egg yolks, oil and water.

Beat until mixture resembles a thick batter.

Stiffly beat the egg whites and fold gently into the mixture.

Pour into a greased and a floured 2pt pudding bowl.

Bake in a preheated oven 180°C for 1½ hours.

Allow to cool.
