Granny’s Christmas Cake
Recipe given to me by granny

Ingredients:
5oz of currants 5oz of brown sugar
5oz of sultanas 1 teaspoon of mixed spice
4oz of raisins 3 large eggs
2oz of almonds 1 glass of whiskey
5oz of margarine
Method
Step 1: Soak the fruit in the whiskey.
Step 2: Cream the margarine and sugar until smooth and creamy.
Step 3: Add one egg, then one tablespoon of flour and stir and repeat again.
Step 4: Add almonds and some mixed spice.
Step 5: Add all the fruit into the mixture and stir well.
Step 6: Preheat the oven to 150°c /gas 2.
Step 7: Spoon the mixture into a lined baking tin.
Step 8: Bake for an hour and a half.
Step 9: Leave in the tin to cool.
Step 10: Icing: Warm some apricot jam and spread over the cake, add a layer of marzipan and finish with a layer of icing.
Step 11: Decorate if you wish. 😊
